Baisakhi the harvest festival celebrated widely across Punjab and Haryana is also an important religious festival for the Sikhs. Also known as Vaisakhi or Vasakhi, is celebrated on April 14 every year. And as no Indian festival is done without delicious food, this is also no doubt

And when it comes to Punjabi cuisine, the traditional items are always a special. Right from Makki ki Roti to Sarsoon ka Saag and of course with Mithi Lassi and Kheer, it’s hard to resist!

So, to make your Baisakhi celebrations delicious, here are array of traditional dishes shared by Pradeep Kumar, Head Chef, The Blue Coriander Restaurant Surat, to help you celebrate the festival with the best of Baisakhi food.

1. Chhole Bhature

Chhole Bhature is a famous north Indian dish that is a part of the Punjabi cuisine and is in fact loved by people across the country and the world. The star combination of chickpeas (chhole) cooked in tangy curry and Bhature, fluffy fried breads made from refined flour dough, is very hard to resist.

2. Achari Mutton

The non-vegetarians flavor a spicy lamb dish called the Achari mutton that has tender lamb meat pickled in Indian spices and condiments including mustard & fennel seeds, cumin seeds, ajawain, red chillies, cloves etc. The dish is served with lachchha parathas and naan, that are basically Punjabi flat breads prepared from refined flour.

3. Tandoori Chicken

Chicken Tandoori is a common Indian starter that is a part of the Punjabi cuisine. The dish is prepared by cooking chicken pieces marinated in spices and curd in tandoor that is a coarse cylindrical oven. It is dished out with a little bit of lime juice squeezed on top, along with onions and green chilies.

4. Chicken Saagwaala

Chicken saagwaala is the healthier form of the chicken butter masala. It has a lighter curry that is made up onor Murg Saagwaala and cooked in spices like haldi, daalchini, cloves, cumin and garam masala. It’s one of the most admired authentic Indian chicken dishes and is eaten with lachchha parathas and naan.

5. Pindi Chana

Pindi chana masala is a one of the signature dishes of the Punjabi cuisine. It’s prepared by cooking chickpeas in a paste with an variety of spices like cardamom, peppercorn, cloves, bay leaves and cinnamon. Pindi chana is served with green chillies, onion and tomatoes slices.

6. Makkey ki roti with sarson ka saag

Any Punjabi festivity is lacking without the legendary Makki ki roti and sarso ka saag. The dish is healthy, tasteful and extremely nutritious. If you want to celebrate Baisakhi the traditionally, then you have this combo as a part of your menu.

7. Punjabi Kadhi and chawal

Punjabi Kadhi is another lip hitting curry prepared in Punjab. It’s made from gram flour, curd and various spices, is served with a crispy gram flour and onion pakoras dunked in it. The Kadhi is liked with plain basmati rice or lachchha parathas.

8. Coconut Laddoo

Coconut laddoos are prepared during Baisakhi. They are prepared from grated coconut, semolina (suji),sugar, condensed milk and ghee or clarified butter. They are usually served cold after dinner, and store in refrigeration, as it has less shelf life.

9. Dry Fruit Kheer

Kheer is a regular sweet that is a part of almost every Indian festive celebration. This sweet rice and milk pudding has different regional avatars. During Baisakhi, this yummy dessert is loaded with various kinds of dried fruits like apricots or anjeer, dried raisins, dried peaches and nuts like almonds and pistachios. It’s cooked with saffron and cardamom, that add the extra rich flavour, and can be served hot or cold, according to your own choice.

10. Fruit Flavored Lassi

Any Punjabi feast is lacking without a thick and sweet curd lassi. During Baisakhi, the drink is a life-saver and a must for beating the burning April heat. The drink is relish all across the subcontinent, with it being offered in many different flavors like mango and rose flavored lassi.
